Main Features

The grapes for this Merlot Cabernet has been specifically selected from small established vineyards to bring forth a wine with lush and ripe dark fruit and a palate complemented by soft tannins and a lingering aftertaste. The Merlot gives it the finesse and drinkability and the Cabernet Sauvignon the structure. The wine has lots of dark black current fruit, mint, hint of nutmeg and pencil shavings on the nose. Old World style of wine coming from a New World!

Origin: Coastal Region
Soil type: Light textured, gravelly topsoil with highly weathered subsoil
Harvesting time: March
Yield: 7 - 8 tons per hectare - handpicked by bunch selection

Vinification

Balling: 24 ºB at harvest
Fermentation: Grapes were fermented in stainless steel tanks for 7 to 10 days and oaked with chips during fermentation, after which they were pressed and left in tank to complete malolactic fermentation
Oaking: The wine was aged in new tight grain medium toast 300l French oak barrels for about 14 months
Aging: Ready to drink now but can mature for 10 years from vintage
Blend: Merlot - 80 % Cabernet Sauvignon - 20 %
Serving: Serve with red meat, stews or rich, creamy fish dishes
